Real Estate in the Time of Coronavirus

The pandemic has disrupted many industries, but the trends real estate professionals are seeing in Ottawa, Perth, and Pembroke are like none other. Real Estate Agent and Algonquin College alumnus Bruce Libbos and Rachel Herrndorf from Blue Panda Realty shared all about the current housing market trends, and they walked us through their experiences and offer tips on how to navigate the current market.

Bruce grew up in the farming country just outside of Ottawa, which allowed him to enjoy the sense of security and freedom that comes with living in a small community while also being able to experience all that the city had to offer. Later in his twenties as a musician, Bruce toured with his band and recorded in a variety of cities in North America, however, eventually he grew weary of his nomadic lifestyle on a tour bus and came to realize the value in being part of a greater community that fosters a feeling of home. Sustainability for Students: Low-waste Shopping

So long single-use plastics and fast fashion, low-waste shopping is here! Have you ever wanted to change your shopping habits to become more sustainable but haven’t done so because it seems intimidating, and not to mention expensive!? This event, featuring the sustainability experts from Isavibe Shop, will show you that low-waste shopping IS accessible and affordable for students who are on a budget and a tight schedule.

About Isavibe Shop:

While in college, Isamary Hernandez began educating herself about sustainability. She quickly learned that society’s current consumption habits are not sustainable and that many eco-friendly products are expensive which makes them inaccessible to many. She realized that by creating more affordable, eco-friendly products, she could encourage more people to make the change to sustainability. Isamary believes that the goal isn’t to make everyone live a perfect zero-waste lifestyle, but to encourage people to become more eco-friendly in their daily lives by making sustainability accessible to all. She hopes that she can educate more people about their consumption for the benefit of the environment and their health.

Cooking Demo with Fratelli Westboro’s Executive Chef Tania White

Watch as Executive Chef Tania White demonstrates how to prepare an authentic Fratelli meal, Chicken Marsala with Pappardelle Alfredo, live from the Fratelli Westboro kitchen. Follow along and enjoy a new recipe in your kitchen.

About Fratelli Westboro

Fratelli is a family run local neighbourhood restaurant established in 1996 that continues to make you feel like a part of the family. Fratelli means “brothers” in Italian. Named after brothers, Richard and Robert Valente, who, with their parents, started the restaurant back in the day when Robert and Mamma Louisa were the original chefs.

Today, Tania White is Head Chef at the Westboro location and has worked for Fratelli for the past 17 years. She is family – when the Valente family was going through the tragic passing of brother Robert, Chef Tania was the matriarch of the Fratelli Westboro family.

Executive Chef Tania White is inspired by all types of food and her passion for cooking exudes amazing energy the minute she steps into the kitchen. Fratelli Westboro prides themselves on using only the best ingredients and exclusively for this event, Chef Tania will be sharing her recipe for Chicken Marsala with Pappardelle Alfredo. The main ingredients for this dish are chicken, Marsala wine sauce, and mushrooms. The pappardelle is prepared with 35% cream, butter and seasoning. Buon Appetito!

Watch the Event

Chicken Marsala Recipe

  • 4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
  • All-purpose flour, for dredging
  • Kosher salt and freshly ground black pepper
  • 1/4 cup extra-virgin olive oil
  • 8 ounces mixed mushrooms, stemmed and halved
  • 1/2 cup sweet Marsala wine
  • 1/2 cup porcini mushrooms and jus
  • 2 tablespoon unsalted butter
  • 1/4 cup chopped flat-leaf parsley
  1. Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them; pound with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly.
  2. Heat the oil over medium-high flame in a large skillet. When the oil is nice and hot, dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess. Slip the cutlets into the pan and fry for 5 minutes on each side until golden, turning once – do this in batches if the pieces don’t fit comfortably in the pan. Remove the chicken to a large platter in a single layer to keep warm.
  3. Lower the heat to medium add the mushrooms and saute until they are nicely browned and their moisture has evaporated, about 5 minutes; season with salt and pepper. Pour the Marsala in the pan and boil down for a few seconds to cook out the alcohol. Add the Porcini mushrooms and jus and simmer for a minute to reduce the sauce slightly. Stir in the butter and return the chicken to the pan; simmer gently for 2 minutes to heat the chicken through.
  4. Season with salt and pepper and garnish with chopped parsley before serving.
  5. Serve with your favourite side pasta or roasted veggies and potatoes.
  6. Buon appetito!
