AC Always Connected: Taco Tuesday Cooking Demo and Food Styling

AC Always Connected is an online event series that keeps our entire Algonquin College community connected. Tune in for live virtual events and help support our local businesses and connect with our College community.

Have you ever wondered how to capture an eye-popping mouth-watering food photograph? Well, wonder no more! Chef Dee Carruthers from Deelicious Eats will walk us through a 15-minute shredded chicken taco demo, teaching us about garnishing techniques, and how to use props to keep your food looking fresh and vibrant on the plate. Dee will cover tips for lighting, styling, and finding your aesthetic when it comes to your food photography.

For an elevated experience, follow along! Just be sure to have your ingredients scaled out and ready to go.

Chipotle Chicken Tacos with Apple Slaw

Ingredients (makes 6-8 tacos):

Chipotle Chicken:

2 tbsp oil
1/2 cup onion, diced
1 clove garlic, minced
1 – 2 chipotle peppers in adobo, minced
1/2 tsp cumin
1/2 tsp salt
1 cup crushed stewed tomatoes
1/4 cup chicken broth
3 cups chicken, cooked and shredded (you can use store-bought rotisserie chicken)
6 – 8 corn tortillas

Slaw/Garnishes:

1 cup purple cabbage, shredded
1/2 green apple, julienned
2 limes
Pinch of salt
1/2 cup crumbled feta (optional)
1/2 avocado, sliced (optional)
1 jalapeño, thinly sliced (optional)
2 tbsp cilantro, chopped (optional)

Directions:

  1. Heat oil in a large skillet over medium heat. Add onions and sauté for 2 to 3 minutes or until almost translucent. Add garlic, chipotle peppers, cumin and salt. Sauté for another 2 minutes or until aromatic and beginning to brown.
  2. Add stewed tomatoes and broth; bring to a simmer and let it reduce slightly for about 5 minutes. Add chicken and cook for another 5 minutes or until thickened and nicely coated.
  3. Meanwhile, toss together cabbage, apple, juice of half a lime and a pinch of salt.
  4. Warm tortillas in non-stick skillet or microwave. Fill each tortilla with chicken mixture, apple slaw and all the garnishes your heart desires!

Dee Carruthers of DeeliciousEats is a recipe developer and food stylist living in Toronto. Although Dee graduated from business school at Western University, three years ago, Dee decided to follow her passion for food and totally switch careers. Dee has a culinary degree from George Brown College, and she has perfected her skills cooking in one of Toronto’s top restaurants, Richmond Station. For the past year, Dee has been working in the test kitchen at THP, a Toronto based agency developing food content and media for major brands.

When Dee is not in the test kitchen at work, she is usually at home in her own kitchen developing recipes and sharing photos on her Instagram and website deeliciouseats.com! Dee is excited to cook with us and share some tips and tricks for making Deelicious food and taking drool-worthy pics!

Talking Circle

In partnership with North Hastings Children’s Services, Algonquin Inòdewiziwin Child and Family EarlyON Centre and in recognition of Indigenous History Month, we are pleased to offer virtual Talking Circle.

During these trying times, parents are in need of a special time to talk. This online talking circle is for that need to share. We will start with a quick introduction of oneself. After that everyone will have a chance to speak in turn respecting each other’s time to speak. We can also pass our time to speak and just listen. When someone is speaking, it is their time to speak from the heart on the subject of how we can support each other during this pandemic. This will be a good experience for everyone because when all voices are heard in an attentive respectful way people open up. The interaction and learning atmosphere from this circle will guide us at NHCS to better assist families online during the stay home and self isolate period. These communications especially if personal should stay confidential and remain in the circle

Angelique Francis

Angelique Francis is a versatile and exceptionally gifted musician. This multi-talented, multi-instrumentalist, multi-genre singer-songwriter and composer has wowed audiences across the globe with her electrifying performances, instrumental abilities and powerful textured vocals. She is known for her eclectic mix of various musical genres including Blues, Soul, Folk, Jazz, Gospel and Rock. Angelique has shared the stage/opened for a large roster of well-known musicians such as Gary Clark Jr, Beth Hart, Tom Cochran, Burton Cummings, and Sugar Ray. Her passion and love of music can be heard in all of her original compositions. Angelique will be performing with a 4-piece band on campus.

Box Circle Exercise

  • Wednesday, January 22, 2 to 4 p.m., in the Gym

Box Circle is a teaching tool to share the historic and contemporary relationship between Indigenous and non-Indigenous people in Canada. Participants step into the role of First Nations, Métis and Inuit people and experience what it must have felt like to live in these communities during colonization, residential schools, the sixties’ scoop and now.

If you are interested in the session, we do ask that you commit to the entire two-hour window.

This session is open to all students and employees. No experience necessary. All materials provided.
