We like to call David the “MacGyver” of the Culinary World. Why you ask?? Well….

One of David’s first projects was to figure out a way to take a byproduct of cooked duck and turn it into soap. We now sell duck soap at Algonquin College and the response has been nothing short of amazing.
Why stop there! Next it was onto a project that involved an outside business. “How can we make Rice Paper wraps from brown rice? “ That’s right – nobody makes brown rice paper and who else to develop this product than David Fairbanks! Through hours and hours of testing and working with students, Dave produced a viable product that hopefully will be going into production sometime soon.

Our school is heading along the same path as most post-secondary institutions and this involves online teaching and learning. Dave jumped at the chance to become a leader in online course development, along with other teachers from our department including Rachael Murphy and Dan Halden. They worked together closely to develop the courses and continue to meet regularly to adapt and improve the courses they teach.
Dave never stops — KPI, course development, in-class practical teaching, selection committees and now hi s latest adventure — designing a class to teach the making of jams, preserves and the pickling of foods.
