AC Professors serve up Flavours of Bharat at the Indian Culinary Festival

Harsh Singh, Baking & Pastry Arts professor and program coordinator, as well as baking instructors Sarika Bagali and Bhakti Sheth, were invited as guest chefs for Flavours of Bharat: Indian Culinary Festival. The event took place on Wednesday, May 8, at the Horticulture Building at Lansdowne Park, was organized by Coconut Lagoon and hosted by the High Commission of India, Ottawa.

Canadian chefs of Indian origin were invited from across the country to the event to introduce Indian flavours into the mainstream Canadian culinary scene using local ingredients. From the tangy chaats of Mumbai to the spicy curries of Kerala, the chefs transported guests to the streets of India with their authentic and innovative creations. Each dish was expertly crafted, bursting with flavour, showcasing the talents of Singh, Sheth and the other guest chefs.

In promotion of the event, Sheth appeared on CBC’s Ottawa Morning Show on May 7, where she described the importance of weaving her Indian culture and flavour into her culinary creations.

At the event, Sheth and Singh worked with a diverse team of student volunteers to create western desserts infused with Indian influences. Their creations included a flourless chocolate cake featuring mung dal halwa; a bread pudding with a twist of Indian flavors like cardamom and saffron; and an ethnic almond and spiced drink transformed into panna cotta, served with Indian puffed rice coated in chocolate.
